In this heat who wants to Slave in the kitchen for an hour over a hot stove ? I know I don’t ! However it does create cravings of meals that remind me of summer or those warm climates. Mexican is a huge hit in our home always. 

  1. It’s usually fairly easy
  2. It’s budget friendly 
  3. There is always leftovers to take for lunch the next day
  4. Kids can help prepare the meal
  5. It’s fun and delicious 

Old El Paso has the best little creations ever called Soft Tortilla Taco Boats. They are so awesome for kids and are so delicious. 

We like to add a lot of fresh ingredients to make it a light and refreshing dinner I love adding avacado and cilantro with a squeeze of lime ontop to give it a ton of flavour.
